Use Your Leftover Veggie Fritters

[vc_row][vc_column][vc_single_image image=”2373″ img_size=”large” alignment=”center”][vc_column_text]These fritters are a great way to incorporate any leftover veg into your morning routine and are full of protein to help our muscles repair and recover.

Serves 2

1 capsicum – small dice

½ red onion – small dice

1 corn cob – kernels

100g cottage cheese

1 whole egg

1 tbsp apple cider vinegar

2 tbsp EVOO

salt & pepper

Method:

  • Place a large pan on a low-medium heat. Once hot, add evoo and the red onion and begin to sweat off without any colour for five minutes. Then add the corn and continue to cook without colour for another five minutes. Finally, add the capsicum and season once finished.
  • Mix the cottage cheese, flour and egg together. Incorporate the vegetable filling with a spatula and combine until well mixed. Season with salt, pepper and vinegar.
  • Place a large pan on medium heat. Once hot, add evoo and spoon in the desired amount of batter. Cook until golden, then flip and repeat. Serve with your favourite salads and dressings!
